Ingredients

  • Beef
  • 2 onions
  • Thai-style red curry paste
  • garlic
  • orange-fleshed kumara, peeled and
  • diced
  • coconut milk
  • beef stock
  • frozen peas
  • fresh coriander

Thai Beef and Sweet Potato Curry

Cut the beef into 2-2.5cm pieces and season with salt and pepper. Brown the meat in a dash of oil in a hot frying pan; this is best done in 2-3 batches. With the last batch of meat, add the onions and curry paste and cook until fragrant.

Put the beef mixture into the slow cooker with the garlic, kumara, coconut milk and stock, and cover with the lid.

Cook on low for 5-6 hours or on high for 3-4 hours. Stir in the peas and coriander, re-cover and continue cooking on high for a further 15-20 minutes.

Serve in bowls garnished with shredded coconut and accompany with steamed rice and prawn crackers.

Meatballs With Spaghetti

Cook meatballs in oven at 180 degrees for 15-20 minutes – warm through spaghetti sauce.

Follow instructions for cooking pasta

To serve

Place cooked meatballs and Top with spaghetti sauce and grated cheese.

  • BBQ Sauce
  • cider vinegar
  • Lea & Perrins Worcestershire Sauce
  • mustard & thyme
  • Pork shoulder, rind removed and fat trimmed
  • onion
  • garlic

Smokey Barbecue Pulled Pork

Preheat the oven to 160°C.
Combine sauce in a small bowl. Place the pork, onion and garlic in a small casserole dish. Pour over the liquid. Cover and cook in the oven for 2 1/2 hours or until the pork is very tender. Turn the pork occasionally.
Remove the pork from the casserole dish and shred with two forks. Return to the casserole and stir through the sauce.
Serve with coleslaw in rolls.

  • enchilada sauce, divided
  • cream cheese, cubed
  • salsa
  • chicken
  • pinto beans, rinsed and drained
  • green chiles
  • flour tortillas (6 inches)
  • shredded cheese blend
  • Shredded lettuce
  • chopped tomato
  • sour cream

Chicken Enchaladas

Spoon 1/2 cup enchilada sauce into a greased 13×9-in. baking dish. In a large saucepan, cook and stir the cream cheese and salsa over medium heat for 2-3 minutes or until blended. Stir in the chicken, beans and chiles.

Place about 1/3 cup of chicken mixture down the center of each tortilla. Roll up and place seam side down over sauce. Top with remaining enchilada sauce; sprinkle with cheese.

Cover and bake at 350° for 25-30 minutes or until heated through. Serve with lettuce, tomato, sour cream and olives if desired.
