  • Red Onion
  • Capsicum
  • Prawns
  • Courgette
  • Pesto Style Tomatoes
  • Feta
  • Pine nuts, toasted (optional)
  • Basil to garnish

Italian-Style Vegetables & Prawns

  1. Heat a dash of oil in a large saucepan. Add red onion, capsicums and courgette and cook over a medium heat until the vegetables start to soften.
  2. Pour over the Pesto Style Tomatoes and stir well to combine with the vegetables. Allow the sauce to come to the boil. Reduce the heat and continue cooking for a further 10-15 minutes until the vegetables are tender and sauce has reduced by a quarter.
  3. Spoon into a serving dish. Garnish with crumbled feta, pine nuts and basil leaves. Great served with fish or chicken.

Ingredients

  • Pork
  • Onion
  • Capsicum
  • Courgette
  • Pineapple pieces
  • 2 Cups Jasmin Rice
  • Sweet & Sour sauce

Sweet & Sour Pork

  1. Heat a dash of oil in a wok (or frying pan) over a high heat. Add pork and onion and stir-fry until pork is golden and nearly cooked.
  2. Add capsicums and pineapple, and stir-fry for 3-4 minutes.
  3. Pour over  Sweet & Sour sauce and sir-fry for a further 3-5 minutes or until meat is cooked.
  4. Serve over cooked jasmine rice.
  5. Cook your Rice in your usual way. Always thoroughly wash your rice prior to cooking.

To cook long-grained white rice on the stove, use a 2 to 1 water to rice ratio. Bring 2 cups of water to a boil in a small saucepan with a tight-fitting lid. You can add an optional pinch of salt if you wish.

  • Chicken
  • Creamy Mushroom Sauce
  • Mushrooms
  • Cream
  • Fettuccini Noodles
  • Garlic Bread
  • Basil to garnish

Creamy Mushroom & Chicken Stroganoff

  1. Heat a dash of oil in a deep frying pan. Brown chicken over a high heat. This may be best done in 2 batches.
  2. Brown mushrooms over a low heat. – Add Mushroom and chicken to step 3.
  3. Reduce heat. Pour over  Creamy Mushroom Sauce and stir. Simmer for 10-15 minutes, stirring occasionally until chicken is cooked. Serve over rice and garnish with freshly chopped Basil & Cream.
  4. Bring a large pot of water to a boil. Drop a pinch of salt in the water. Place the noodlesin the boiling water. Boil the noodles until tender. Test to see whether the noodles are done. Remove the noodles from heat and drain. Put the noodles in a bowl and add a few drops of olive oil.

  • Beef mince
  • Onion
  • Tomato Paste
  • 1 cup beef stock (Mix stock cube with 1 cup of water)
  • Chilli Beans with Cumin & Coriander
  • Sour Cream to garnish
  • Basil to garnish
  • 2 cups Rice
  • Green Salad

Chilli Con Carne

  1. Heat a dash of oil in a frying pan and brown mince with the onion.
  2. Add  Tomato Paste. Stir and cook for 1 minute.
  3. Add stock and  Chilli Beans Stir, cover and simmer for 15 minutes until mince is cooked.
  4. Serve with Rice &  Green salad on the side.
