  • ​shredded cooked chicken
  • diced onion
  • olive oil
  • sour cream
  • chopped parsley
  • flour tortillas
  • minced garlic
  • grated cheese
  • pasta sauce

Chicken Enchiladas with Mexican Salad

Pre heat oven to 180’C. Spray dish with cooking spray.

Step 1 – Add oil to the pan cook onion and garlic till soft. Add chicken and stir

Step 2 – Pour 1/2 cup of pasta sauce in with chicken and onions. Add sour cream and 1/2 parsley. Stir to combine.

Step 3 – Take off heat. Add 1/2 grated cheese. Mix to combine

Step 4 – Pour enough pasta sauce in the bottom of the dish to cover. Fill tortillas with chicken mix and roll long ways. Fills dish with rolled tortillas. Pour the rest of pasta sauce over the tortillas and top with the rest of the grated cheese and the rest of the parsley.

Step 5 – Cover with foil and cook for 10 min. Take foil off and cook for a further 5 min until golden and sauce is bubbling.

  • broccoli
  • penne pasta
  • butter
  • olive oil
  • chicken breast
  • garlic minced
  • heavy cream
  • milk
  • mozzarella cheese
  • salt and pepper

Chicken & Broccoli Alfredo

Step 1 – Steam broccoli florets and set aside. Cook pasta and set aside also.

Step 2 – Heat oil and butter in a pan and cook chicken. Season with salt and pepper. When cooked set aside.

Step 3 – To the pan add garlic and cook for 30 secs, add broccoli. Toss in garlic and set aside again.

Step 4 – Make the creamy sauce by adding the cream, bring to a boil. Add cheese and stir. Reduce heat and add milk slowly till you have a nice consistency. Add all the other ingredients back into the pan and stir. Serve as is. Enjoy!

  • olive oil
  • sesame oil
  • boneless pork chops
  • tamari sauce
  • brown sugar
  • rice vinegar
  • sesame oil
  • minced garlic
  • minced ginger
  • siracha
  • green beans
  • cornflour

Sesame Pork & Green Beans with Rice

Step 1 – Heat olive oil and 1 Tblspn sesame oil in a pan and add pork. Cook through until browned.

Step 2 – Mix the other ingredients except beans and cornflour together in a jug. pour over the pork and add green beans. Reduce heat, cover and cook for 5 mins.

Step 3 – Mix the cornflour with 1 tblspn of water. Add to the pan and mix until thick.

Step 4 – Bring a pot of water to the boil, about 3 cups. Add 2 cups of rice and stir. stirring every couple of mins cook rice until soft. Drain and divide between plates. Top with pork. Enjoy

  • diced ham
  • butter
  • diced onion
  • plain flour
  • Grated cheese
  • mustard powder
  • salt & pepper to taste
  • milk
  • cooked macaroni elbows
  • breadcrumbs

Macaroni & Cheese

Pre heat oven to 190’C. Spray oven dish with cooking spray. ​

Step 1 – Melt butter, add onion and cook till soft. Stir in flour. Cook till frothy then add the mustard powder. Remove from heat and add milk slowly, whisking thoroughly in between to make a smooth sauce. Season with salt and pepper. Return to heat and bring to boil stirring constantly. Take off heat once thickened. Add half the cheese and all of the ham. ​

Step 2 – Add macaroni to the sauce mix and stir to combine. Pour into prepared oven dish. Cover with remaining cheese and breadcrumbs. ​

Step 3 – Bake for 20 min or until golden Let stand for 5 minutes before serving. ​

Step 4 – Serve with side salad.
